- Preheat oven so it's ready by the time you are.
- Place fish in a glass baking dish - my friend used halibut filets but I used salmon. Either choice is a good one (or another mild fish).
- Cover fish with slices of zucchini. Sliced mushrooms would work as would broccoli, cauliflower, etc.
- Top with fresh sliced tomatoes (or diced canned tomatoes), fresh or dried basil (as you have it) and a bit of pepper.
- Cover and bake until fish is done.
It goes well with a salad or whole grain rice.
